Cheeseburger Chowder

Ingredients
½ pound lean ground beef
½ cup onion
3 tablespoons butter
2 cloves garlic, minced
1 cup diced carrots
1 tablespoon fresh basil
3 cans chicken broth
2 diced peeled potatoes
¼ cup flour
½ cups evaporated milk
2 cups processed American cheese, cubed (sharp, if available)
salt & pepper
diced dill pickles and tomatoes for garnish
essence of Emeril (see Emerill’s Creole Seasoning)
Salt and pepper ground beef; add essence as desired; in a saute pan, brown the ground beef. Add onion and butter and saute until tender. Add garlic, carrots, and basil; saute another 3 minutes. Add flour and potatoes and saute 3 more minutes. Add broth and bring to a boil stirring occasionally. Reduce and cook until carrots and potatoes are tender. Add milk and reduce for 6 to 8 minutes. Reduce heat again and add diced cheese. Serve and add garnish.
