What’s For Dinner?

Verna and I prepared one of our favorite Tex-Mex dinners today, “Crazy Yellow Chicken Fajitas.” Similar to, but much better than, the well-known fast food chain’s version of this. We marinate the chicken breasts over night and then we bake them for an hour, finishing up on the hot grill. The chicken gets shredded and stuffed into flour tortillas along with the rice and beans. It’s a very tasty meal and better than El Pollo any day. Click on the image to enlarge.
