January Outdoor GrillingWe managed to escape a few showers that were moving through the area today in order to cook our entrée on the grill behind the patio. There were showers early in the morning and then a reprise until after we finished dinner and put the grill away before some shower activity resumed.

Our delicious meal consisted of Grilled Chateaubriand with Carrot/Snow Peas Medley and Mashed Potatoes. The roast was part of a beef tenderloin that we bought a couple of weeks ago. The side dishes were also very good.

Labor Day 2016

Labor Day Grilling’

Labor Day is here and with it come some cooler temperatures. It only got up to 97° here today and it was good weather for cookin’ on the grill. We enjoyed grilled beef tenderloin steaks (Filet Mignon), steamed broccoli and a baked sweet potato.

We are going to miss the summer, but here in our town, second spring has begun and will last until almost Thanksgiving. The mild Wickenburg winter weather attracts snowbirds from the arctic states from Labor Day until Memorial Day next year

Smoked Pork Roast

On Friday afternoon, we placed a pork roast in the smoker to cook all night and most of Saturday so we could have pulled pork sandwiches for our Saturday weekend dinner. The two images above are the before (Friday) and after (Saturday) photos of the pork roast in the smoker.

After smoking the roast at 250° overnight, the meat was literally falling off of the bone as we lifted it out of the pan into a large container. I shredded enough meat for our sandwiches before dinner and shredded the rest after dinner. I spent about 45 minutes getting the rest of the meat of of the nine pound roast shredded and put in a container for use in a variety of leftover dishes that Verna and I have in mind.

We have had a couple of beautiful days camping here in the Coachella Valley. The temperatures and the weather in general have been very acceptable. This evening, we enjoyed this beautiful sunset. Tomorrow, we will be breaking up camp and headed to the Colorado River to visit with our friends who live there.

While we were here in Palm Desert, we enjoyed visiting with our six-month old grandson, his parents and his other grandpa was here, too. We had a cookout yesterday, when I grilled some steaks and Verna fixed the side dishes which we fed to everyone.

We are planning to prepare another steak dinner for our friends at the river tomorrow. After we spend the night there, we will be driving the Roadrunner RV back to Wickenburg.

Cookout Ready

When we arrived in the Coachella Valley today, we quickly got settled in for our first of three overnight stays here. Tomorrow, we will further be setting up the grill, tables, chairs and other items to prepare the tenderloin steaks, the gluten-free Mac’n’Cheese and BBQ beans for the cookout we promised the kids and the other set of grandparents.
